1.准备好所有食材

2.将300克面粉加130克清水用厨师机和面5分钟(因为水分少,机器可能不能将面揉成团,就要靠手再揉成团。)

3.将面团盖上湿布醒40分钟

4.扁豆洗干净掰成段,猪肉切丝,葱姜切丝,青蒜摘去老叶洗干净切斜丝备用。

5.猪肉丝用淀粉和生抽用手抓匀

6.面团醒好以后再揉揉然后擀成大面片

8.切成自己想要的宽度的面条

9.面条切好以后稍微撒些干面粉抖开

10.炒锅烧热以后加入玉米油然后下入抓好的肉丝煸炒

11.肉丝变色以后加入葱姜爆香

12.下入扁豆段翻炒

13.扁豆煸炒一会儿加入15ml老抽

14.再加入4克盐(因为考虑到一会儿还有面条的加入所以盐要多放一些。)

15.加入400ml清水(水跟扁豆齐平就可以)

16.水开以后将面条抖散铺在表面

17.开锅后盖上盖子改小火焖12分钟

18.看到锅里的汤汁不多了,用筷子将面条扒拉散开,然后翻拌翻拌,令面条上色一致。

19.最后下入切好的青蒜丝翻炒均匀即可出锅开吃!
小窍门&温馨提示
面条粗细随自己喜好,传统方法是最后放蒜末。
